• 1 lb Roma; or medium tomatoes, seeded; 1/2" dice
• 1/2 c. Red onion; small dice
• 1 1/2 c. Pitted olives; Kalamata or canned; halved
• 1/4 c. Un dried tomates; reconstituted; chopped
• 1 c. Cauliflower; small pieces
• 1/2 c. Broccoli; small pieces
• 1/2 c. Roasted red peppers; 1/2" dice
• 1/2 c. Capers
• 1 1/2 c. Feta cheese; crumbled
• 1/4 c. Fresh grated parmesan cheese
• Magic Salad Dressing:
  • 4 Cloves garlic; minced
  • 3/4 c. Extra virgin olive oil
  • 1/4 c. Red wine vinegar
  • 1 1/2 tbs. Capers
  • 1 tbs. Liquid from capers
  • 1/4 c. Lemon juice
  • 1/4 tsp. Fresh ground pepper
  • 1 tsp. Salt
